Seeds for Eating

Seeds may be tiny, but they are packed with nutrients like protein, fibre, iron, vitamins and omega-3 fatty acids. So they should be a regular part of your diet.  

 

It is little wonder that seeds are so nutritionally good for us as they are an embryonic plant enclosed in a protective outer covering called the seed coat, usually with some stored food. To nurture a new plant a seed almost by definition needs to be packed with nutrition.

Raw or toasted

The general advice is to eat your seeds without cooking them, in essence in their raw state. But if you are looking for a healthier snack in the evening rather than a packet of crisps then try some toasted Sunflower seeds. This can be lightly toasted and benefit from the addition of a little Soya sauce.

Gound Seeds

With some of the smaller seeds, such as Sesame and Linseed they may pass straight through, so in this case they may be better ground and added to a smoothy or a topping for your breakfast cereal.

As anyone who has looked at our site can tell we like to offer choice and as wide a variety of products as we can, and in this our Seed section this is also true, you will find :

  • Alfalfa seeds (Lucerne) - superficially resembles clover, with clusters of small purple flowers followed by fruits spiralled in 2 to 3 turns containing 10-20 seeds. Alfalfa is native to warmer temperate climates. In the US much of the Alfalfa grown is genetically modified, our organic Alfalfa seeds are not genetically modified. Alfalfa is related to the pea. It is possibly the easiest seed to sprout giving a bumper crop of mild, nutty tasting sprouts. Alfalfa is good for thos that exercise as it is a complete protein and will support the regeneration of muscle tissue after exertion. The sprouted seed contains good levels of fibre, protein, Vitamin C, Vitamin A, Niacin (B3), Calcium and Iron. As with many spouted seeds these are best eaten raw as they start to shrivel and lose their crunch when cooked.
  • Broccoli  - They take just 4-5 days to grow and can be grown right through the year. 10g of seed will produce up to 100g of sprouts.
  • Chia - Chia seeds have become the must have seed for those that exercise. A new world seed cultivated by the Aztecs, it is still used in ParaguayBoliviaArgentina, Mexico and Guatemala, sometimes with the seeds ground, or with the whole seeds, in nutritious drinks and as a food source. Chia, which is rich in omega-3 fatty acids, is grown commercially, with the seeds boasting an extractable yield of about 25–30%. Chia seeds are particularly popular with vegetarians and vegans for their nutritional properties. Chia seeds are a rich source of nutrients and antioxidants.
  • Hemp - Hemp Seeds are high in fibre and provide an excellent source of protein. About 44% of the weight of hemp seed is edible oils, containing about 80% essential fatty acids (EFAs). Hempseed's amino acidprofile is comparable to other sources of protein such as meat, milk, eggs and soy.
  • Linseed(Flax) - Flax seeds come in two basic varieties: 1. brown; and 2. yellow or golden (also known as golden linseeds).[18] Most types have similar nutritional characteristics and equal numbers of short-chain omega-3 fatty acids. Flax seeds contain a large amount of a nutritious polyunsaturated oil. This healthy oil is high in omega 3 and omega 6 fatty acids, both of which reduce the risk of coronary disease and cancer. The fatty acids contained in flax seeds also raise the levels of good cholesterol while lowering high blood pressure. Flax seeds contain an omega 6 fatty acid known as linoleic acid, which is considered to be a very important component of human health and wellness. In addition, flax seeds are high in dietary fibre, which promotes good digestion. Linseed is a small seed with a crunchy surface and therefore needs some chewing, at Naturally Good Food we sell Prewitts gound Linseed, for maximum benefit we suggest you grind your Linseed before adding to a smoothie or on top of your morning cereal.
  • Omega Four Mixed Seed - A crunchy, healthy mix of specially selected, unseasoned organic seeds. This famous combination of seeds is designed by Infinity Foods to provide colour, texture and taste. Perfect for adding to cereals and muesli and for sprinkling over salads.
  • Poppy - We often see Poppy Seeds sprinkled on the top of bread rolls. Poppy Seeds contain some niacin and folate, but poppy seeds are a better source of minerals. Just 1 teaspoon provides measurable amounts of calcium, iron and zinc. Every gram of seeds has about 33 micrograms of morphine and 14 micrograms of codeine. That’s not enough to cause any ill effects from their use in baked goods, but it is enough to show up as a false positive result in drug tests.
  • Pumpkin - One-quarter cup of pumpkin seeds contains nearly half of the recommended daily amount of magnesium, which participates in a wide range of vitally important physiological functions, including the creation of ATP (adenosine triphosphate, the energy molecules of your body), the synthesis of RNA and DNA, the pumping of your heart, proper bone and tooth formation, relaxation of your blood vessels, and proper bowel function. There is some indication that Pumpkin consumption is related to increased libido, Pumpkin seeds have a high zinc content which is associated with male testosterone deficiancy.
  • Sesame - Sesame are an important sources of phyto-nutrients such as omega-6 fatty acids, flavonoid phenolic anti-oxidants, vitamins, and dietary fiber with potential anti-cancer as well as health promoting properties. Sesame oil was one of the first seed oils used by man and toasted sesame oil has a unique taste. This oil gives a distinctive, authentic flavour to Asian dishes.
  • Sprouting Mix - A great mix of beans and seeds to sprout, check-out the differences.
  • Sunflower  - At Naturally Good Food our Sunflower Seeds come from either the USA or China as the sale of this product means we have to ensure we have good sources of supply. Did you know? Sunflower seeds are a good source of iron and unsaturated fatty acids. To intensify the taste of sunflower seeds, lightly toast them in a dry pan and add to salads, home made bread, in a sandwich on muesli, yogurt or baked potatoes.

  • Caraway - Caraway seeds are not really a seed but the fruit and are a member of the carrot family. The caraway fruit has a strong pungent anside like flavour and is often teamed up with Rye Bread. Caraway is a key ingredient in many cultures and in the UK we have Caraway seed cake. For those that like to know where your food comes from just under 30% of the world production of Caraway comes from Finland, where the long summer nights offer ideal growing conditions.
  • Celery - not widely used, celery seeds have a strong celery taste and are perhaps best used sparingly unless you are making a dish such as celery soup. Depening on personal taste celery seeds can be added to bread or as a sprinkle, you can also try celery tea. Celery seed has been used as medicine for thousands of years in many parts of the world but not that well known here in the West. Indian Ayurvedic medicine used celery seed to treat colds, flu, water retention, poor digestion, rheumatoid arthritis and other diseases.
  • Coriander
  • Cumin
  • Fennel
  • Fenugreek
  • Mustard Seeds

Sprouting

One of the great things about sprouting live seeds and beans and grasses is that they can be sprouted, this gives extra vitality to your food and introduces new flavours and textures into your diet.

Sprouting is the process whereby seeds are germinated and eaten either raw or cooked. Seeds of many kinds, including grasses, grains and beans, are used for sprouting. A variety of health and nutritional benefits can be obtained from sprouting. Take precautionary measures to stay safe and derive the greatest benefits. Make sure you avoid infections; bacterial contamination is a potential health hazard in sprouting. Fine root structures of sprouts can form a tangled mat that harbors microorganisms. Also, some seeds, such as broccoli and radish, have rough surfaces that make it easy for bacteria to cling to.

To cut down the risk of bacterial contamination you can:

  • Cook your sprouts in for example a stir-fry, but this will impact on their nutritional value
  • Prepare you sprouts with antimicrobial foods such as vinegar, garlic and onions can also help kill any lurking pathogens.

A further element is to buy sprouts labelled for sprouting, these will have been prepared specially for sprouting.

If you are new to sprouting, it's not difficult and is a great way to introduce children into growing and where food comes from. For those new to sprouting, who may like to invest a small amout to get you started, this can include:

Seeds Hints and Tips for their use

How to sprout seeds


There are a number of basic steps involved in sprouting seeds. In summary, you need to:

Soak your seeds for the correct length of time.
Drain your seeds, rinse and drain again.
Transfer the seeds to a sprouting container (spreading them evenly across the container).
Cover the sprouting container to prevent the sprouts from drying out.
For the required time, rinse and drain the sprouting seeds every morning and every evening, to prevent the formation of mould.
Harvest your sprouts at the correct time.
Rinse the sprouts with fresh water.
Eat immediately for full nutritional value, or store in the fridge for a few days.
